PCD Develops The Perfect Bread Knife For Today's Large Round Loaves
Large round peasant loaves are growing in popularity. Unfortunately, until now, there has not been an adequate way to slice these breads. The problem with an ordinary bread knife is that as you cut through the loaf your knuckles hit the cutting board, requiring you to either lift up the loaf in your hand to finish the cut or tear the bread at the bottom.
Several years ago, knife manufacturers solved this problem for smaller loaves when they introduced 6- to 8-inch blades with offset handles. The offset handle provides the knuckle clearance allowing the user to slice cleanly through to the bottom of the loaf. Unfortunately a 6- to 8-inch length is much too short for today's popular larger breads.
